No-Bake Fruit Delight

This dessert is a scrumptious no bake dessert and perfect for those hot summer days!

  • 1 ½ cups graham cracker crumbs
  • ½ tsp cinnamon
  • 6 tbsp butter, melted
  • 8-ounce package cream cheese softened
  • ½ cup plus 3 tbsp sugar, divided
  • 2 cups whipping cream
  • ½ tsp vanilla
  • 21-ounce can fruit pie filling (peach or cherry are delicious)

Step by Step Instructions

Step 1

To prepare the crust: In a bowl, combine graham cracker crumbs and cinnamon  Add melted butter and blend with a fork until crumbs are moistened.  Set aside 2 tablespoons of crumbs to sprinkle on the top.  Press crumb mixture into the bottom of a 9-inch-by-9-inch pan that’s been sprayed with nonstick cooking spray.

Step 2

To prepare filling:  With an electric mixer, cream together the softened cream cheese and ½ cup of sugar until smooth.  In a separate bowl, whip the cream, 3 tablespoons sugar and vanilla together until stiff peak form.  Next, by hand, gently combine the whipped cream and cream cheese mixture.

Step 3

Spread a little less than half the whipped cream/cream cheese mixture evenly over the crust in the pan.  Evenly spread the fruit pie filling over the whipped cream layer.  Top pie filling layer with the remaining whipped cream/cream cheese mixture.  Sprinkle the top with the reserved graham cracker crumbs.  Refrigerate for several hours or overnight and serve cold.
