  • 1/2 pound ground pork sausage
  • 12 eggs, beaten
  • 4-ounce can chopped green chile peppers, drained
  • 3/4 cup onion, chopped
  • Salt and pepper to taste
  • Diced tomatoes or chunky salsa

Step by Step Instructions

Heat oven to 350 degrees. Lightly grease 12 regular-sized muffin cups with nonstick cooking spray.

Brown sausage in a skillet over medium-high heat; stir as sausage cooks to break into smaller pieces. When cooked, drain well and transfer to a large bowl. In the same bowl, stir in eggs, chilies, onion, salt and pepper until combined.

Spoon 1/4 cup of sausage mixture into each prepared muffin cup. Bake 15 to 18 minutes until egg sets and a toothpick inserted in center comes out clean. Serve hot with diced tomatoes or chunky salsa.
