Slow Cooker Chicken Enchilada Soup

Ingredients

  • 1 loaf french bread cubed
  • 8 large eggs
  • 3 cups milk
  • 1 tsp vanilla
  • 2 tbsp sugar
  • butter
  • cinamon and sugar

Step by Step Instructions

Step 1

Grease bottom and sides of 9 x 13 inch glass baking dish.

Step 2

Cube french bread and place in dish – enough to fill the dish.

Step 3

Beat eggs and add milk and vanilla. Stir in sugar.  Pour over bread.

Step 4

Dot with butter and sprinkle with cinamon and sugar.

Step 5

Cover with foil and refrigerate overnight.

Step 6

Bake covered at 350 degrees for 40 minutes.  Remove foil and bake for an addition 10 – 20 minutes or until the desired crispness.

Step 7

Serve with powdered sugar, syrup, fruit, or your favorite topping.
